Restaurant Sous Chef
The Lincoln Marriott Cornhusker Hotel in search of a talented and driven leader as our next Sous Chef. This key role on our culinary team will lead the culinary operations under the direction of the Executive Chef, for all of the hotel food outlets to include, Miller Time Pub & Grill, the Cafe at the Cornhusker, in-room dining, & Starbucks. What will you be doing?
  • Interview, hire, train, supervise, schedule, and participate in activities of cooks and other personnel involved in preparing, cooking, and presenting food in accordance with recipe notation, productivity standards, cost controls, and forecast needs.
  • Responsible for and supervises daily culinary and stewarding operations in the absence of Executive Chef & Executive Sous Chef; assigning, in detail, specific duties to all associates under supervision for efficient operation of kitchen.
  • Schedules restaurant culinary staff so that proper coverage is maintained while keeping payroll costs in line.
  • Ensures proper ordering, receiving, and storage of all food items in refrigerators, freezers, and dry food storage to maintain product freshness.
  • Attend in-house meetings as required by your position.
  • Visually inspects appearance of all food for proper taste, color combination, and overall presentation to maintain appeal.
What you will bring to the role?
  • High school education required. Minimum of 2 years formal culinary schooling or equivalent work experience beneficial.
  • 2-4 years in management of restaurant/line production of hot and cold food, associate dining, casual dining restaurants, and multiple outlet operations preferred.
  • Basic mathematical skills necessary to understand recipes, measurements, requisition amounts, and portion sizes.
  • Good working knowledge of accepted safety and sanitation standards.
  • Extensive experience with slicers, mixers, grinders, food processors, etc.
  • Thorough knowledge of food products, standard recipes, and proper preparation.
